Here’s a meatloaf recipe that’s compact yet soft and sure to please everyone!
Ingredients
For the Meatloaf:
1 lb (500g) ground beef
1/2 lb (250g) ground pork (optional, for flavor and tenderness)
1 cup breadcrumbs
1/2 cup milk
1 egg
1 small onion, finely chopped
2 garlic cloves, minced
2 tbsp fresh parsley, chopped
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika (optional)
1/4 cup grated Parmesan cheese (optional for added richness)
For the Glaze:
1/4 cup ketchup
2 tbsp brown sugar
1 tsp mustard
1 tsp Worcestershire sauces
Instructions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Meatloaf Mixture:
In a large bowl, combine breadcrumbs and milk. Let it sit for 5 minutes to soften.
Add ground beef, pork (if using), egg, onion, garlic, parsley, Parmesan, and spices to the bowl. Mix well with your hands or a spoon until everything is just combined (don’t overmix).
3. Shape the Meatloaf:
Transfer the mixture to a baking dish or loaf pan. Shape it into a loaf, pressing gently to compact but not too tightly.
4. Make the Glaze:
In a small bowl, whisk together ketchup, brown sugar, mustard, and Worcestershire sauce. Spread half of the glaze over the meatloaf.
5. Bake the Meatloaf:
Bake in the preheated oven for 40 minutes. After that, remove from the oven, spread the remaining glaze, and return to the oven for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
6. Let It Rest:
Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps it stay moist and compact.
